Recipe - Charbroiled Oysters w/ Butter and Olive Oil Sauce

All ingredients are approximate

12 shucked oysters - (As an alternative, you can use Bayou Carlin's Garlic & Parmesan Oyster Kit available at Rouses)
3/4 cup olive oil
5 Tbsp fresh minced garlic
2 Tbsp black pepper
2 tsp cayenne pepper
1 Tbsp Italian seasoning
1/8 tsp oregano
2 Tbsp chopped parsley
1 tbsp Lemon juice
1 stick of butter
Shredded parmesan cheese

Garlic bread
Lemon wedges

Directions

- Heat gas or charcoal grill to 500 degrees

- In a saucepan, melt butter then mix all ingredients except parmesan cheese and parsley in a bowl and put it to the side

- Put spoonful of mixture on each oyster topped with shredded Parmesan cheese.  

- Place oysters on grill under direct heat (You'd want to place your oysters on the hottest side of the grill)

- Close grill for at least 1 minute to allow oysters to cook

- Open grill and add enough of the butter mixture to overflow into the fire to allow it to flame up

 - (Optional) Close grill once again for at least 30 seconds to give oysters a smoked flavor. Oysters are cooked once they puff and curl

- Top with parmesan cheese and chopped parsley.

- Serve with garlic or french bread and lemon wedges
